Chocolate making

On a trip to Buffalo, NY, I tried the local specialty - sponge candy. It is made by perhaps a dozen shops in Buffalo and is relatively unknown in other areas. The preeminent purveyors are Watson’s and Fowler’s.

After returning home, I experimented with making sponge candy of my own and, after a lot of testing, I think I have a successful process.
