Sponge candy

On a trip to Buffalo, NY, I tried the local specialty - sponge candy. It is made by perhaps a dozen shops in Buffalo and is relatively unknown in other areas. The preeminent purveyors are Watson's and Fowler's.

After returning home, I experimented with making sponge candy of my own and, after a lot of testing, I think I have a successful process.

  • Too much for the mold
  • Some scary looking sponge
  • This looks better - ready to be cut into bite size blocks
  • Workers 'bottoming' the sponge pieces
  • An experiment with a crude homemade enrober (didn't work)
  • Chocolate ready for enrobing the cut up sponge pieces
  • Some nice looking sponge candy
